This easy 5-minute honey balsamic vinaigrette is the perfect balance of sweet honey and tangy balsamic, with a little kick from mustard and garlic. It’s quick to make, uses simple pantry ingredients, and turns any salad into a celebration.

  • ½ cup (120 ml) extra virgin olive oil
  • 3 tablespoons (45 ml) balsamic vinegar
  • 2 tablespoons (30 ml) honey
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, minced
  • ¼ teaspoon fine sea salt
  • ⅛ teaspoon freshly ground black pepper

Instructions

  1. Prepare the garlic: Peel and finely mince one small clove of garlic. Sprinkle a tiny pinch of salt on the garlic while mincing to help break it down and release more flavor.
  2. Combine the vinegar and garlic: Add the balsamic vinegar and minced garlic to a mason jar. Let it sit for about 1 minute to soften the garlic’s sharpness and infuse the vinegar.
  3. Add the mustard, honey, salt, and pepper: Add the Dijon mustard, honey, salt, and black pepper to the jar. Do not stir yet.
  4. Add the olive oil: Pour in the olive oil. Let everything settle for a moment.
  5. Shake vigorously: Screw the lid on tightly and shake the jar vigorously for 20-30 seconds until the mixture transforms into a creamy, emulsified dressing.
  6. Taste and adjust: Open the jar and taste. Adjust with more salt, honey, or vinegar as needed.
  7. Serve or store: Use immediately or store in the refrigerator. If storing, shake again before using.

Notes

Let the garlic sit in the vinegar for a minute before adding oil to soften its flavor. Use room temperature olive oil for better emulsification. The dressing keeps in the refrigerator for up to 2 weeks and flavors improve after a day. If the dressing separates, simply shake it again. For a vegan version, substitute honey with maple syrup or agave nectar.
