Easy Apple Cider Mimosa with Cinnamon Sugar Rim

A quick and easy fall cocktail combining crisp apple cider with dry champagne, finished with a warm cinnamon sugar rim. Perfect for brunches, holiday gatherings, and cozy celebrations.

  • 1 cup (240 ml) apple cider (unfiltered)
  • 2 cups (480 ml) champagne or prosecco (Brut or Extra Dry)
  • Ice cubes (optional)
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (2.5 g) ground cinnamon
  • 1 tablespoon (15 ml) honey or maple syrup
  • Apple slices (for garnish, e.g., Honeycrisp, Fuji, or Granny Smith)
  • Cinnamon sticks (optional, for garnish)

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Whisk with a fork until evenly mixed.
  2. Prep the glasses: Using a pastry brush or folded paper towel, apply a thin, even layer of honey or maple syrup to the outside rim of each glass. Work one glass at a time.
  3. Rim the glasses: Invert the glass and dip the coated rim into the cinnamon sugar mixture. Gently twist to ensure even coverage. Lift straight up and tap off excess sugar. Set upright.
  4. Add ice (optional): If desired, drop 2-3 ice cubes into each glass.
  5. Pour the apple cider: Fill each glass about one-third full with apple cider (about 1/3 cup or 80 ml per glass).
  6. Top with champagne: Slowly pour champagne or prosecco over the cider, filling the glass to about an inch from the rim. Pour gently to preserve bubbles.
  7. Garnish and serve: Thinly slice an apple, cut a small slit in each slice, and perch on the rim. Add a cinnamon stick as a stirrer if desired. Serve immediately.

Notes

Chill all ingredients beforehand for best results. Use dry sparkling wine to balance sweetness. For a non-alcoholic version, substitute champagne with sparkling apple cider or ginger ale. The cinnamon sugar rim can be prepared a day in advance. Apple slices can be kept in lemon water to prevent browning.
