Ingredients

Scale
  • 1.5 pounds ground beef (85% lean)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/4 cup finely chopped fresh parsley
  • 2 medium zucchinis, sliced into 1/2-inch rounds
  • 1 red bell pepper, cut into 1-inch squares
  • 1 yellow bell pepper, cut into 1-inch squares
  • 1 small red onion, cut into wedges
  • 8 wooden or metal skewers (if wooden, soak in water for 30 minutes before grilling)
  • 1/2 cup ketchup
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon chili powder (optional)
  • 6 hamburger buns, lightly toasted
  • Lettuce leaves
  • Tomato slices
  • Pickles
  • Cheese slices (cheddar or American)

Instructions

  1. In a large bowl, combine ground beef with smoked paprika, garlic powder, onion powder, salt, pepper, and parsley if using. Mix gently until just combined. Divide into 6 equal portions and shape into patties about 3/4-inch thick. Cover and refrigerate until ready to grill.
  2. In a smaller bowl, whisk together ketchup, honey or maple syrup, apple cider vinegar, Worcestershire sauce, and chili powder. Adjust sweetness or tanginess to taste. Set aside.
  3. Thread zucchini slices, bell peppers, and onion wedges alternately onto soaked skewers. Lightly brush with olive oil and sprinkle with salt and pepper. Keep refrigerated or in a cool spot until grilling.
  4. Preheat grill to medium-high heat (about 375°F). Lightly oil the grates to prevent sticking.
  5. Grill veggie skewers for 8-10 minutes, turning every 2-3 minutes until tender and slightly charred. Remove and keep warm.
  6. Grill burgers for 5-6 minutes on the first side, flip, then brush generously with BBQ sauce. Add cheese slices on top if desired. Cook another 5-6 minutes or until internal temperature reaches 160°F. Apply more sauce in the last minute of grilling.
  7. Lightly toast buns on the grill cut-side down for 2-3 minutes until golden.
  8. Assemble burgers with lettuce, tomato, pickles, and extra BBQ sauce. Serve immediately with plenty of napkins.

Notes

Soak wooden skewers for at least 30 minutes before grilling to prevent burning. Do not overmix the meat to keep burgers tender. Use a meat thermometer to ensure burgers reach 160°F for safety. Let patties rest 3-5 minutes after grilling to lock in juices. Kids can help with safe tasks like mixing sauce and threading veggies.
