Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9×9-inch baking dish.
  2. In a large bowl, combine sliced peaches, sugar, flour, lemon juice, bourbon, vanilla extract, cinnamon, and salt. Toss gently to coat evenly. Set aside.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add cold cubed butter and cut into the dry ingredients until mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Stir in cold buttermilk and sugar just until combined; do not overmix.
  5. Pour the peach mixture into the prepared baking dish. Drop spoonfuls of biscuit dough evenly over the peaches, leaving small gaps.
