Instructions

  1. Prep your ingredients by washing and chopping veggies such as bell peppers, zucchini, onions, and garlic. Break up ground turkey into small pieces.
  2. Cook 2 cups of brown rice (about 370g) in 4 cups (950ml) of water, covered, at medium heat until fluffy.
  3. Heat 1 tablespoon (15ml) of olive oil in a skillet over medium-high heat. Add chopped onions and garlic; cook until fragrant and translucent, about 3 minutes.
  4. Add ground turkey to the pan. Cook, stirring frequently, until browned and cooked through. Season lightly with salt and pepper.
  5. Add chopped veggies (zucchini, bell peppers, corn), 1 can (14 oz/400g) diced tomatoes, and 1 teaspoon (2g) each of cumin and paprika. Cook until veggies soften but still have a slight bite.
  6. Mix in the cooked rice or pasta into the skillet. Adjust seasoning with salt, pepper, and a squeeze of fresh lemon juice. Stir well to blend flavors.
  7. Serve warm, optionally topped with shredded cheese or fresh herbs.
