These creamy, apple pie-inspired overnight oats come together in just 5 minutes and are perfect for busy mornings. Made with simple ingredients like rolled oats, apple, cinnamon, and maple syrup, they taste like a warm hug in a jar.

Ingredients

Scale
  • 1/2 cup (50g) old-fashioned rolled oats
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 medium apple (about 150g), half grated and half chopped into small cubes
  • 12 tablespoons (15-30ml) maple syrup, to taste
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Optional toppings: extra maple syrup, granola, chopped walnuts or pecans, dollop of yogurt

Instructions

  1. Wash the apple. Grate one half of the apple (including skin) into a small bowl to get about 1/4 cup of grated apple. Chop the other half into small, pea-sized cubes. Set aside.
  2. In a mason jar or airtight container, combine the rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Stir to distribute evenly.
  3. Add the milk, Greek yogurt, and maple syrup on top of the dry ingredients. Do not stir yet.
  4. Add both the grated and chopped apple to the jar.
  5. Stir everything together thoroughly until completely combined, scraping the bottom and sides of the jar. The mixture should look a little soupy.
  6. Seal the jar and refrigerate for at least 6 hours, but preferably 8-12 hours (overnight).
  7. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for a warm breakfast. Top with desired toppings.

Notes

For best texture, use old-fashioned rolled oats (not instant or steel-cut). The chia seeds help thicken without making it gummy. Grate half the apple for flavor throughout; chop the other half for texture. Oats keep in the fridge for up to 5 days. Do not freeze.
