  • 1/4 cup unsalted butter
  • 1 tablespoon ranch dressing seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups cooked, shredded chicken (rotisserie chicken recommended)
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped green onions (optional)
  • 1 tablespoon crumbled blue cheese (optional)
  • Tortilla chips, celery sticks, carrot sticks, or crusty bread for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Set cream cheese on the counter to soften. If needed, microwave in 10-second bursts until soft but not hot (about 20 seconds total).
  2. In a medium saucepan over low heat, combine hot sauce and butter. Stir gently until butter is completely melted and mixture is smooth (about 2-3 minutes). Do not let it bubble.
  3. Add softened cream cheese to the saucepan, breaking it into chunks. Stir continuously until fully incorporated and silky smooth (about 3-4 minutes).
  4. Stir in ranch seasoning, garlic powder, and onion powder until evenly distributed. Taste and add a pinch of salt if needed.
  5. Add 1 cup of shredded cheddar cheese and all of the Monterey Jack cheese. Stir until melted and sauce is thick and glossy (about 2 minutes).
  6. Fold in shredded chicken until every piece is coated.
  7. Transfer mixture to an 8×8-inch baking dish or small oven-safe skillet. Spread into an even layer about 1 to 1.5 inches thick.
  8. Sprinkle remaining 1/2 cup of cheddar cheese on top. Do not press it into the dip.
  9. Bake for 15-18 minutes, until bubbly around the edges and cheese on top is melted and lightly browned. For a darker top, broil for the last 1-2 minutes, watching carefully.
  10. Let the dip rest for 5 minutes before serving. Sprinkle with chopped green onions and blue cheese crumbles if desired.

Notes

For best results, use full-fat block cream cheese and shred your own cheese from a block. Let the dip rest for 5 minutes after baking to set up. Can be assembled up to 2 days ahead (without topping cheese) and refrigerated; add 5 minutes to baking time if starting from cold.
