A quick and easy overnight oats recipe with creamy peanut butter, ripe banana, and rolled oats. Perfect for busy mornings, this no-cook breakfast is naturally sweet, satisfying, and can be customized with your favorite toppings.

  • 1 large ripe banana (about 120g mashed)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 cup (240ml) milk (any kind)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds
  • ½ teaspoon (2.5ml) vanilla extract
  • ⅛ teaspoon salt

Instructions

  1. Mash the banana thoroughly in a jar or bowl until smooth.
  2. Add peanut butter, milk, maple syrup, and vanilla extract to the mashed banana. Stir vigorously until smooth and creamy.
  3. Add rolled oats, chia seeds, and salt. Stir until oats are fully coated and no dry patches remain.
  4. Seal the jar or container and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir well. If too thick, add a splash of milk. Serve cold or at room temperature with desired toppings.

Notes

Mash banana thoroughly to avoid brown slimy chunks. Chia seeds are key for thick, pudding-like texture. Taste the milk mixture before refrigerating to adjust sweetness or salt. For thinner oats, add 2-3 tablespoons extra milk; for thicker, reduce milk by same amount. Keeps in fridge up to 5 days; best on days 2-3. Can be frozen for up to 3 months.
