Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together 1 ½ cups all-purpose flour, 3 ½ teaspoons baking powder, 1 teaspoon salt, and 1 tablespoon sugar.
  2. Combine Wet Ingredients: In a separate bowl, whisk 1 ¼ cups milk, 1 large egg, 3 tablespoons melted butter, and 1 teaspoon vanilla extract (if using).
  3. Make the Batter: Pour the wet ingredients into the dry mix and gently stir with a whisk or fork. Do not overmix; a few lumps are okay.
  4. Preheat the Pan: Heat a non-stick skillet or griddle over medium heat for about 3-4 minutes. Test by sprinkling a few drops of water; they should dance and evaporate quickly.
  5. Cook the Pancakes: Lightly butter the pan. Use a ladle or ¼ cup measuring cup to pour batter onto the hot skillet. Cook until bubbles appear on the surface and edges look set, about 2-3 minutes. Flip carefully and cook the other side for another 2 minutes until golden brown.
