Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining 2 cups of flour, one cup at a time, until a shaggy dough forms. Turn onto a lightly floured surface and knead for 6-8 minutes (or use a stand mixer with dough hook on medium speed for 5 minutes) until smooth, elastic, and slightly tacky.
  3. First rise: Place dough in a lightly greased bowl, cover with plastic wrap or a clean kitchen towel, and let rise in a warm spot for about 45 minutes, or until doubled in size.
  4. Shape the pretzel bites: Punch down the risen dough and turn onto a lightly floured surface. Divide into 4 equal pieces. Roll each piece into a long rope, about 12-14 inches long. Cut each rope into 1-inch pieces using a sharp knife or bench scraper (about 12-15 bites per rope, 48-60 total).
  5. The baking soda bath: Preheat oven to 425°F (220°C). Bring a large pot of water (about 8 cups) to a boil. Carefully add baking soda (it will fizz). Reduce heat to a simmer.
