Instructions

  1. Wash and peel the peaches under cool water using a sharp paring knife. Optionally blanch peaches by dipping in boiling water for 30 seconds then into ice water to loosen skin.
  2. Slice peaches into even 1/2-inch thick slices.
  3. Prepare lemon water bath by mixing 1/4 cup lemon juice with 2 cups cold water; add sweetener if desired.
  4. Soak peach slices in lemon water bath for exactly 5 minutes.
  5. Remove slices with a slotted spoon and gently pat dry with a clean towel or paper towels.
  6. Line a baking sheet with parchment paper or silicone mat and arrange peach slices in a single layer without touching.
  7. Flash freeze peach slices on the baking sheet for 2-3 hours until firm.
  8. Transfer frozen peach slices to labeled freezer-safe zip-top bags or airtight containers, pressing out excess air, then return to freezer.
