  • 1 cup (170 g) semi-sweet chocolate chips or chopped chocolate
  • ½ cup (120 ml) marshmallow fluff or 1 cup (about 10 large) regular marshmallows
  • Crackers or cookies (graham crackers, digestive biscuits, animal crackers, or gluten-free options)
  • 1 tablespoon (15 ml) unsalted butter, softened
  • ½ teaspoon (2.5 ml) vanilla extract
  • Pinch of sea salt (optional)
  • Nut butter (optional): peanut butter or almond butter
  • Fresh sliced strawberries or banana slices (optional for fruit-infused variation)

Instructions

  1. Melt the chocolate in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth and glossy (about 3-5 minutes). Alternatively, use a double boiler over gently simmering water.
  2. Prepare the marshmallow layer: if using marshmallow fluff, measure ½ cup; if using regular marshmallows, melt 1 cup in the microwave for 30 seconds to 1 minute until gooey, stirring well.
  3. Stir in 1 tablespoon softened unsalted butter and ½ teaspoon vanilla extract into the melted chocolate. Add a pinch of sea salt if desired.
  4. Lay out crackers or cookies on a parchment-lined baking sheet. Spread a thin layer of melted chocolate on half of them using the back of a spoon.
  5. Dollop or spread the marshmallow mixture on top of the chocolate layer.
  6. Place the remaining crackers on top, gently pressing down to create sandwiches.
  7. Refrigerate the assembled treats for at least 15 minutes to allow the chocolate to set slightly but remain soft.
  8. Remove from the fridge and let sit at room temperature for 5 minutes before serving.

Notes

Work quickly when assembling to prevent chocolate from hardening. If chocolate hardens too much, gently rewarm before spreading. Store leftovers in an airtight container in the fridge for up to 3 days and bring to room temperature before serving. For dairy-free or vegan versions, use dairy-free chocolate chips and vegan marshmallow fluff. Nut butters add creaminess and flavor but are optional.
