  • 6 mini flour tortillas (about 6-inch diameter)
  • 1/2 pound deli turkey breast, thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons cream cheese, softened
  • Optional: garlic powder, black pepper, finely chopped spinach

Instructions

  1. Prep your ingredients: Let cream cheese soften at room temperature for 10 minutes. Shred cheddar if using a block. Slice deli turkey into pieces that fit neatly inside tortillas.
  2. Spread a very thin layer of softened cream cheese (about 1/2 teaspoon per tortilla) on one side of each tortilla.
  3. On half of each tortilla (the side with cream cheese), place an even layer of turkey slices. Top with about 2 tablespoons of shredded cheddar cheese. Add any optional extras like spinach.
  4. Fold the empty half of the tortilla over the filling to create a half-moon shape. Press down gently to seal.
  5. Using a pastry brush or paper towel, spread a thin layer of softened butter on the outside of each folded quesadilla.
  6. Heat a large non-stick skillet over medium heat until a drop of water sizzles.
  7. Place 2-3 quesadillas in the skillet without overcrowding. Cook for 2-3 minutes per side until golden brown and cheese is melted.
  8. Transfer cooked quesadillas to a cooling rack and let rest for at least 2 minutes before slicing.
  9. Using a sharp knife or pizza cutter, slice each quesadilla into 3 wedges.
