These easy no-bake peanut butter granola bites are the perfect grab-and-go snack for busy days. Made with simple pantry ingredients like rolled oats, creamy peanut butter, honey, and chocolate chips, they come together in just 15 minutes of active time and require no baking.

  • 2 cups (180g) rolled oats
  • 1 cup (250g) creamy peanut butter
  • 1/3 cup (110g) honey
  • 1/2 cup (90g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add the rolled oats, ground flaxseed, and salt. Stir to evenly distribute.
  2. Measure the peanut butter: Scoop out 1 cup of creamy peanut butter. If cold, let it come to room temperature for 10 minutes or microwave for 15 seconds.
  3. Add the wet ingredients: Drop the peanut butter into the bowl with the oats. Add the honey and vanilla extract on top.
  4. Mix everything together: Stir from the bottom, folding the wet ingredients up through the dry. Mix for about 2 minutes until a cohesive, slightly sticky dough forms. If too dry, add a teaspoon of honey; if too wet, add a tablespoon of oats.
  5. Fold in the chocolate chips: Pour in the mini chocolate chips and gently fold until evenly distributed. Do not overmix.
  6. Chill the mixture (optional but recommended): Refrigerate the bowl for 15-20 minutes to make the dough easier to handle.
  7. Roll into bites: Line a baking sheet with parchment paper. Scoop about 1 tablespoon of the mixture and roll into a ball. Place on the prepared sheet. Repeat with remaining mixture to make 20-24 bites.
  8. Let them set: Refrigerate the baking sheet for at least 30 minutes (1 hour is better) to allow the bites to firm up.
  9. Store and enjoy: Transfer to an airtight container and keep in the refrigerator for up to 2 weeks.

Notes

For best texture, chill the mixture before rolling. If too sticky to roll, wet hands slightly with cold water. Toasting the oats at 350°F for 8-10 minutes before using adds a nutty flavor. Different honeys have different moisture levels; adjust oats as needed. These freeze well for up to 3 months.
