  • ½ cup (130g) creamy peanut butter
  • ⅓ cup (110g) honey
  • 2 tablespoons (14g) ground flaxseed
  • ¼ cup (45g) mini chocolate chips
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Combine the dry ingredients: In a mixing bowl, add 1 cup (90g) rolled oats, 2 tablespoons (14g) ground flaxseed, and ¼ teaspoon salt. Stir them together.
  2. Add the wet ingredients: Scoop in ½ cup (130g) creamy peanut butter, ⅓ cup (110g) honey, and 1 teaspoon vanilla extract. Spread them out a bit for easier mixing.
  3. Mix until combined: Stir everything together with a spoon or spatula for about a minute until the mixture comes together. If too dry, add a teaspoon of water or more honey; if too wet, add another tablespoon of oats.
  4. Fold in the chocolate chips: Add ¼ cup (45g) mini chocolate chips and fold them in gently.
  5. Chill the mixture: Pop the bowl in the fridge for 10-15 minutes before rolling to firm up the peanut butter and reduce stickiness.
  6. Roll into balls: Scoop out about 1.5 tablespoons of mixture and roll it between your palms firmly. You should get about 12-14 balls. Place them on a parchment-lined plate or baking sheet.
  7. Final chill: Refrigerate the rolled balls for at least 30 minutes to set. They should be firm to the touch but still soft inside.
  8. Store and enjoy: Transfer the balls to an airtight container and keep them in the fridge for up to two weeks.

Notes

For best results, use natural peanut butter with no added sugar. Chill the mixture for 10-15 minutes before rolling to reduce stickiness. These balls taste even better after a day or two in the fridge as flavors meld. For a vegan version, swap honey for maple syrup and add an extra tablespoon of oats. For a low-sugar version, replace honey with 2 tablespoons unsweetened applesauce and add an extra tablespoon of peanut butter.
