These soft, cake-like pumpkin chocolate chip cookies come together in one bowl with no mixer needed. Made with wholesome ingredients like whole wheat pastry flour and coconut sugar, they’re a healthier fall treat that tastes like it came from a bakery.

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine pumpkin puree, coconut sugar, melted coconut oil, egg, and vanilla extract. Stir until smooth and well combined.
  3. Sprinkle whole wheat pastry flour, baking powder, baking soda, salt, and pumpkin pie spice on top of the wet mixture. Stir gently until just combined; do not overmix.
  4. Fold in dark chocolate chips until evenly distributed. Dough will be thick and slightly sticky.
  5. Let dough rest for 5 minutes to allow flour to absorb moisture.
  6. Drop rounded tablespoons of dough onto prepared baking sheet, spacing 2 inches apart. Gently shape with fingers if desired.
  7. Bake for 10-12 minutes, until edges are set and slightly golden. Centers will still look soft.
  8. Let cookies cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Blot pumpkin puree with paper towels if watery to prevent flat cookies. Use room temperature egg for better incorporation. Check baking powder freshness by testing in hot water. For gluten-free, use 1:1 gluten-free baking flour blend. For vegan, use a flax egg. Cookies taste even better the next day.
