  • 8 oz cream cheese, softened to room temperature
  • 1/4 cup granulated sugar
  • 1/2 cup whole milk (or 2%)
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Open both cans of cinnamon rolls. Set the icing packets aside. Cut each cinnamon roll into 4 quarters. Scatter the pieces evenly in the prepared dish.
  3. In a medium bowl, beat the softened cream cheese with an electric hand mixer until smooth, about 1 minute. Add sugar, milk, eggs, and vanilla extract. Beat until completely smooth and no lumps remain.
  4. Pour the cream cheese mixture evenly over the cut cinnamon rolls. Use a spatula to spread it into all crevices.
  5. Drizzle the melted butter evenly over the top. Sprinkle ground cinnamon over everything. If using nuts or raisins, scatter them on top now.
  6. Cover the dish tightly with plastic wrap or aluminum foil. Refrigerate for at least 8 hours or overnight.
  7. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit on counter for 15-20 minutes while oven heats.
  8. Bake, uncovered, for 30-35 minutes, or until top is golden brown and center is set (not jiggly).
  9. Remove from oven and let cool for 5 minutes. Squeeze reserved icing packets over the top and drizzle evenly.
  10. Serve warm.
