Instructions

  1. Wash and prep the fruit. Rinse all fresh fruits gently under cold water. Drain and pat dry with a clean towel. Halve grapes lengthwise to prevent choking hazards (about 5 minutes).
  2. Slice strawberries and kiwi using a plastic knife, carefully slicing strawberries into thin pieces and peeling then dicing kiwi into small chunks. Supervise kids closely during this step (about 7 minutes).
  3. Drain canned or frozen fruits. If using canned peaches or pineapple, drain the juice well to avoid sogginess. Thawed frozen berries should be patted dry to keep the salad fresh (about 3 minutes).
  4. Layer the fruit in the bowl in rainbow order: red, orange, yellow, green, then blue/purple. This makes the salad visually appealing and fun to assemble (about 5 minutes).
  5. Prepare the dressing by squeezing the juice of one lime or lemon into a small bowl. Add honey or maple syrup if using, and stir to combine (about 2 minutes).
  6. Pour the dressing over the fruit and gently toss using a large spoon or spatula. Avoid over-mixing to keep fruit pieces intact and colorful (about 3 minutes).
