Easy Sheet Pan Nachos with Ground Turkey Recipe

Quick and easy sheet pan nachos with seasoned ground turkey, melted cheese, and fresh toppings. Perfect for game day or a busy weeknight dinner.

  • 1 lb ground turkey (93/7 lean-to-fat ratio)
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water or chicken broth
  • 1 large bag tortilla chips (1012 ounces)
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (frozen, thawed and patted dry)
  • 1/2 cup sour cream
  • 1/2 cup pico de gallo or salsa
  • 1 avocado, diced
  • Fresh cilantro, chopped (a handful)
  • 1 jalapeño, sliced (seeds removed if desired)
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line your sheet pan with aluminum foil or parchment paper for easy cleanup.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until it starts to soften and turn translucent.
  3. Add the ground turkey, breaking it apart with your spoon. Cook for 5-6 minutes, stirring occasionally, until the turkey is no longer pink.
  4. In a small bowl, mix together the chili powder, cumin, smoked paprika, salt, and pepper. Sprinkle this over the cooked turkey. Add the minced garlic and stir everything together. Cook for 1 minute until fragrant.
  5. Pour in the 1/4 cup water or broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes until the liquid mostly evaporates.
  6. Spread about half the tortilla chips in an even layer on your prepared sheet pan.
  7. Spoon half the ground turkey mixture evenly over the chips. Sprinkle half the black beans and half the corn on top. Cover with 1 cup of shredded cheese.
  8. Arrange the remaining chips on top, slightly offset from the first layer. Add the rest of the turkey, beans, and corn. Top with the remaining 1 cup of cheese.
  9. Place the sheet pan in the preheated oven and bake for 8-10 minutes, until the cheese is fully melted and bubbly and the edges of the chips start to turn golden brown.
  10. Remove the pan from the oven and let it rest for 2 minutes. Dollop spoonfuls of sour cream across the surface. Sprinkle diced avocado, pico de gallo, fresh cilantro, and sliced jalapeño over everything. Squeeze the lime juice over the top.
  11. Serve immediately.

Notes

Layer ingredients strategically to avoid soggy chips. Drain and pat dry wet ingredients like beans and corn. Add fresh toppings like sour cream and salsa after baking. Shred your own cheese for better melting.
