  • 1 tablespoon (15ml) sesame oil
  • 2 tablespoons (16g) cornstarch
  • 2 tablespoons (30ml) water
  • 3 cups (about 300g) fresh broccoli florets
  • Cooked rice or quinoa, for serving
  • Sesame seeds and sliced green onions, for garnish (optional)

Instructions

  1. In a small mixing bowl, whisk together the honey, low-sodium soy sauce, minced garlic, rice vinegar, and sesame oil until well combined.
  2. Place the chicken breasts or thighs in the bottom of a 4 to 6-quart slow cooker, arranging them in a single layer if possible. Pour the prepared sauce over the chicken, ensuring each piece is coated.
  3. Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, until the chicken is cooked through and tender enough to shred.
  4. Carefully remove the chicken from the slow cooker using tongs and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.
  5. In the same small bowl, whisk together the cornstarch and water to form a smooth slurry. Pour the slurry into the liquid remaining in the slow cooker and stir well. Turn the slow cooker to high, cover, and let the sauce thicken for 10-15 minutes, until glossy and thickened.
  6. Return the shredded chicken to the slow cooker. Add the fresh broccoli florets on top and gently stir to coat. Cover and cook on high for another 15-20 minutes, until the broccoli is tender-crisp and bright green.
  7. Serve immediately over hot cooked rice or quinoa. Garnish with sesame seeds and sliced green onions if desired.
