  • ¼ cup finely diced onion or shallots
  • Butter or non-stick spray for greasing the slow cooker pot

Instructions

  1. Lightly grease the inside of your slow cooker pot with butter or non-stick spray to prevent sticking. (5 minutes)
  2. In a large mixing bowl, crack 8 large eggs. Add 1 cup (240 ml) of whole milk or half-and-half. Whisk until the mixture is smooth and slightly frothy. (3 minutes)
  3. Stir in ½ teaspoon salt, ¼ teaspoon black pepper, ¼ teaspoon garlic powder, and a pinch of nutmeg. (1 minute)
  4. Fold in 1 cup chopped spinach (well drained if frozen), ½ cup diced bell peppers, ¼ cup finely diced onions, and ½ cup cooked bacon bits or diced ham if using. (4 minutes)
  5. Stir in 1 cup shredded cheddar or gruyère cheese. (1 minute)
  6. Transfer the entire mixture into the prepared slow cooker pot and spread evenly. (2 minutes)
  7. Cover and cook on LOW for 3 to 4 hours. The quiche is done when edges are set and center is slightly jiggly but not liquid. A toothpick inserted should come out clean or with a few moist crumbs. (3-4 hours)
  8. Let the quiche sit uncovered for 10-15 minutes after cooking to set further and make slicing easier. (15 minutes)
