  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 1/2 cup water or beef broth
  • 810 small flour or corn tortillas
  • 1 cup shredded cheddar cheese or Mexican blend
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup chopped green onions
  • 1 ripe avocado, diced or mashed
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro, roughly chopped (optional)
  • 1 lime, cut into wedges
  • Optional extras: jalapeño slices, refried beans or black beans, hot sauce or salsa

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium heat. Add the finely chopped onion and sauté for about 3 minutes until soft and translucent.
  2. Add the minced garlic and cook for another 30 seconds until fragrant, avoiding burning.
  3. Increase heat to medium-high and add the ground beef. Break it apart and cook until browned and cooked through, about 6-8 minutes.
  4. Drain excess fat if necessary, then stir in chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper.
  5. Pour in 1/2 cup water or beef broth, reduce heat to low, and simmer for about 5 minutes until liquid reduces slightly and meat is flavorful.
  6. While meat simmers, prep toppings: chop lettuce, dice tomatoes, slice olives and green onions, mash or dice avocado, and shred cheese.
  7. Warm tortillas by wrapping them in a damp kitchen towel and microwaving for 30 seconds, or heat in a dry skillet for 20 seconds per side.
  8. Arrange meat, tortillas, and toppings on the table in small bowls or platters for easy access.
  9. Encourage kids to build their own tacos starting with a tortilla, adding meat, toppings, and a squeeze of lime.

Notes

If meat dries out during simmering, add a splash more broth or water but avoid making it soupy. Finely chop onions and tomatoes for easy eating. Brown meat properly for better flavor.
