  • 8 ounces (225g) cream cheese, softened
  • ½ cup (60g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) heavy cream, whipped to soft peaks
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 kiwi, peeled and thinly sliced
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet or pizza pan with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the egg and vanilla extract to the butter-sugar mixture and mix until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Slowly add this dry mix to the wet ingredients, stirring gently until the dough just comes together.
  5. Press the dough evenly into your prepared pan to about ¼ inch thickness. Smooth the edges.
  6. Bake the crust for 15-18 minutes, or until golden around the edges.
  7. Remove the crust from the oven and let it cool completely on a wire rack.
  8. Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped heavy cream until fully combined and fluffy.
  9. Spread the cream cheese mixture evenly over the cooled crust.
  10. Arrange the fruit on top in a patriotic pattern or casual scatter.
  11. Garnish with fresh mint leaves if desired and refrigerate for at least 30 minutes before serving.

Notes

Do not add cream cheese topping while crust is warm to avoid melting. Whip heavy cream to soft peaks for best texture. Use a serrated knife for clean slicing. Crust can be baked a day ahead and stored airtight. For gluten-free, substitute flour with gluten-free baking flour. Dairy-free alternatives can be used but texture will vary.
