  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1 tablespoon water

Instructions

  1. Cut the chicken thighs into 1-inch cubes and place in a large mixing bowl.
  2. In a small bowl, combine soy sauce, rice vinegar, minced garlic, and grated ginger. Pour over the chicken and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  3. Soak wooden skewers in water for 30 minutes to prevent burning (skip if using metal skewers).
  4. In a separate bowl, whisk together sriracha, honey, lime juice, smoked paprika, and water until smooth. Set aside.
  5. Remove chicken from marinade, letting excess drip off. Thread pieces onto skewers, leaving space between each piece.
  6. Preheat grill or grill pan over medium-high heat (around 400°F). Lightly oil the grates or pan.
  7. Grill skewers for 4-5 minutes per side. After flipping, brush generously with the sriracha glaze. Repeat glazing after flipping again, allowing glaze to caramelize but not burn.
  8. Check that chicken reaches an internal temperature of 165°F and juices run clear.
  9. Remove skewers from grill and let rest for 2 minutes.
  10. Garnish with chopped cilantro or green onions and squeeze lime wedges over the top before serving.
