A quick and easy fresh salsa combining juicy peaches, spicy jalapeños, and bright cilantro for a sweet and spicy flavor perfect for snacks or meals.

  • 3 medium ripe peaches, peeled and diced
  • 12 fresh jalapeños, seeded and finely chopped
  • ½ cup chopped fresh cilantro leaves
  • ¼ cup finely diced red onion
  • Juice of 1 lime (about 2 tablespoons)
  • 1 teaspoon honey or agave syrup (optional)
  • ½ teaspoon kosher salt
  • Pinch of freshly ground black pepper

Instructions

  1. Peel the peaches by blanching in boiling water for 30 seconds, then transfer to ice water to loosen the skin, or peel with a sharp knife. Dice into roughly ½-inch pieces.
  2. Slice jalapeños lengthwise, remove seeds and membranes if less heat is desired, then finely chop.
  3. Finely dice ¼ cup of red onion.
  4. Rinse and pat dry cilantro leaves, then chop until you have about ½ cup.
  5. In a mixing bowl, gently toss together diced peaches, jalapeños, onion, and cilantro.
  6. Add lime juice, kosher salt, black pepper, and optional honey or agave syrup. Stir gently to combine.
  7. Let the salsa sit at room temperature for 10-15 minutes to allow flavors to meld. Taste and adjust seasoning as needed.

Use firm, ripe peaches for best texture. Remove jalapeño seeds and membranes to reduce heat. Let salsa rest 10-15 minutes before serving to meld flavors. Best served fresh or within one day refrigerated. Handle peaches gently to avoid bruising. For a milder salsa, use fewer jalapeños or substitute with poblano peppers. For a chunkier texture, dice ingredients larger; for smoother, pulse briefly in a food processor.
