Ingredients

  • 2 large English cucumbers, thinly sliced
  • 1 cup plain full-fat Greek yogurt
  • 3 tablespoons finely chopped fresh dill
  • 1 small garlic clove, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon extra virgin olive oil (optional)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • 2 tablespoons thinly sliced red onion (optional)

Instructions

  1. Wash and dry the cucumbers thoroughly. Slice into thin rounds about 1/8 inch thick. Optionally peel partially or fully.
  2. Place cucumber slices in a colander, sprinkle with a pinch of salt, and let sit for 10 minutes to draw out excess moisture.
  3. Pat the cucumber slices dry with paper towels or a clean kitchen towel.
  4. In a medium bowl, combine Greek yogurt, lemon juice, minced garlic, chopped dill, olive oil (if using), salt, and black pepper. Whisk until smooth and creamy.
  5. Add cucumber slices and optional red onion to the dressing. Gently toss to coat evenly.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Before serving, gently stir and garnish with extra dill sprigs or cracked black pepper if desired. Serve chilled.

Notes

Salting and draining cucumbers before mixing prevents watery salad. Prepare dressing ahead and toss with cucumbers just before serving to keep cucumbers crisp. Adjust salt and lemon juice to taste before chilling. Use a mandoline for even slicing if available.
