  • 8 ounces burrata cheese
  • 4 slices rustic sourdough or country bread, toasted
  • 1 cup packed fresh basil leaves
  • 1/2 cup extra virgin olive oil
  • 1 small garlic clove, peeled
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Prepare the basil oil by blending 1 cup fresh basil leaves, 1/2 cup extra virgin olive oil, 1 small peeled garlic clove, and 1 teaspoon lemon juice (if using) until smooth and vibrant green, about 2-3 minutes.
  2. Toast 4 slices of rustic sourdough bread until golden and crispy, about 3-4 minutes per side in a grill pan or 2-3 minutes in a toaster.
  3. Wash and slice 2 cups of heirloom tomatoes into 1/4-inch thick slices. Arrange on a plate or in a bowl and sprinkle lightly with sea salt and freshly ground black pepper.
  4. Spread a generous layer of burrata cheese over each toasted slice of bread.
  5. Layer the sliced heirloom tomatoes evenly over the burrata cheese.
  6. Drizzle the fresh basil oil generously over the tomato-topped toast.
  7. Finish with a sprinkle of flaky sea salt and a few cracks of black pepper. Optionally, drizzle with good balsamic vinegar.
