  • 1/2 cup (120 ml) cold water
  • 1/2 cup (120 ml) vodka or rum
  • about 1 cup (240 ml) whipped cream (freshly whipped or store-bought)
  • 12 tablespoons granulated sugar (optional, for whipped cream)
  • a few drops blue food coloring (optional)

Instructions

  1. Bring 1 cup (240 ml) of water to a rolling boil.
  2. Pour the boiling water into a heatproof mixing bowl and stir in the blue raspberry jello powder. Whisk gently until completely dissolved, about 2 minutes.
  3. Stir in 1/2 cup (120 ml) cold water, then 1/2 cup (120 ml) vodka or rum. Mix gently but thoroughly to combine without creating bubbles.
  4. If desired, add a few drops of blue food coloring and stir well.
  5. Carefully fill your shot cups or molds about 3/4 full with the liquid mixture.
  6. Place the filled cups on a tray and refrigerate for at least 3 to 4 hours, or until firm.
  7. While the jello sets, whip your cream to soft peaks. If using homemade, add sugar to taste and a splash of vanilla extract. Chill until ready to use.
  8. Once the jello shots are firm, add a generous dollop of whipped cream on each.
