Ingredients

  • Seedless watermelon, cut into bite-sized cubes
  • Fresh strawberries, hulled and halved
  • Green grapes, washed

  • Flour tortillas
  • Shredded cheddar cheese
  • Cooked chicken breast, shredded (optional)

Instructions

  1. Prepare the Honey-Lime Glaze and Fruit Skewers (15 minutes): In a small bowl, whisk together 2 tablespoons of honey and 1 tablespoon of fresh lime juice until smooth. Thread watermelon cubes, strawberries, green grapes, and mint leaves onto the skewers, alternating colors and flavors. Lightly brush the glaze over the fruit skewers just before serving. Keep skewers chilled in the fridge until party time.
  2. Make the Cheesy Quesadilla Bites (20 minutes): Heat a non-stick skillet over medium heat and lightly grease with olive oil or butter. Place a flour tortilla in the pan, sprinkle 1/2 cup (about 60g) shredded cheddar cheese over half the tortilla. Add shredded chicken if using, fold the tortilla over and press gently. Cook 2–3 minutes per side until cheese melts and tortilla is golden brown. Remove from heat, cool slightly, cut into bite-sized pieces. Serve with mild salsa.
  3. Prepare the Yogurt Pops (10 minutes + freezing): Mix 2 cups (480ml) Greek yogurt with 1/2 cup (120ml) fresh berry puree or chopped berries. Add 1–2 tablespoons honey or maple syrup if desired. Pour into popsicle molds or paper cups, insert sticks, freeze at least 4 hours or overnight.
  4. Make the Refreshing Lemonade Twist (10 minutes): In a large pitcher, combine 1 cup (240ml) fresh lemon juice with 4 cups (960ml) cold or sparkling water. Stir in 1/4 cup (60ml) honey or agave syrup until dissolved. Add fresh basil leaves and ice cubes. Chill for 30 minutes before serving.

Notes

Soak wooden skewers in water for 30 minutes before threading fruit to prevent splinters. Brush honey-lime glaze on fruit skewers just before serving to avoid stickiness. Quesadillas should be cooled slightly before cutting to avoid hot cheese burns. Yogurt pops require freezing overnight. Lemonade tastes better after chilling to infuse basil flavor. Use gluten-free tortillas and dairy-free yogurt for dietary adaptations.
