A quick and easy frozen yogurt bark packed with fresh fruit and a touch of sweetness, perfect for a healthy, kid-friendly snack or light dessert.

  • 2 cups (475 ml) full-fat Greek yogurt, plain or vanilla-flavored
  • 2 tablespoons honey or maple syrup
  • 1/2 cup (75 g) fresh strawberries, thinly sliced
  • 1/2 cup (75 g) blueberries
  • 1 medium kiwifruit, peeled and thinly sliced
  • 1 tablespoon chia seeds (optional)
  • 2 tablespoons unsweetened shredded coconut (optional)

Instructions

  1. In a medium mixing bowl, combine 2 cups (475 ml) of Greek yogurt with 2 tablespoons of honey or maple syrup. Stir well until smooth and slightly glossy. Taste and adjust sweetness if needed.
  2. Line a rimmed baking sheet (9×13 inches / 23×33 cm) with parchment paper or a silicone baking mat.
  3. Pour the sweetened yogurt onto the lined tray and spread evenly to about 1/4-inch (0.6 cm) thickness using a spatula or spoon.
  4. Scatter the sliced strawberries, blueberries, and kiwifruit evenly over the yogurt. Sprinkle chia seeds and shredded coconut if using. Press fruit lightly into the yogurt without submerging.
  5. Place the tray uncovered in the freezer for at least 4 hours or overnight until completely firm.
  6. Remove the tray from the freezer, lift the bark out using the parchment paper edges, and cut into bite-sized pieces with a sharp knife. Serve immediately or store in an airtight container in the freezer.

Notes

Use full-fat Greek yogurt for best creaminess. For dairy-free, substitute with coconut or almond milk yogurt. Spread yogurt evenly to about 1/4 inch thickness to freeze properly. Freeze uncovered to prevent moisture build-up. Use a sharp knife dipped in warm water for clean cuts. Bark freezes well up to two weeks when stored in airtight container with parchment between layers.
