These homemade cinnamon sugar pretzel bites are soft, chewy, and coated in a crunchy cinnamon-sugar coating. Paired with an easy beer cheese dip, they’re the ultimate game day snack or comfort food treat.

  • 1 ½ cups warm water (about 110°F)
  • 2 ¼ teaspoons active dry yeast (one standard packet)
  • 1 tablespoon granulated sugar
  • 3 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • ½ cup baking soda
  • 8 cups water
  • ½ cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon
  • ¼ cup unsalted butter, melted (for brushing)
  • 2 tablespoons unsalted butter (for dip)
  • 2 tablespoons all-purpose flour (for dip)
  • 1 cup whole milk
  • ½ cup beer (lager or pale ale)
  • 2 cups sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder (optional)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and active dry yeast. Stir and let sit for 5-10 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 1 ½ cups flour until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place dough in a lightly greased bowl, cover, and let rise in a warm spot for 20-30 minutes until puffed.
  5. Preheat oven to 425°F and line a baking sheet with parchment paper.
  6. In a large pot, bring 8 cups of water to a boil. Carefully add ½ cup baking soda and stir until dissolved. Reduce heat to a gentle simmer.
  7. Divide risen dough into 4 equal pieces. Roll each into a 12-14 inch rope, then cut into 1-inch pieces.
  8. Working in batches of 8-10, drop pretzel bites into simmering baking soda water for 30 seconds. Transfer to prepared baking sheet with a slotted spoon.
  9. Bake for 10-12 minutes until golden brown, rotating the sheet halfway through.
  10. While baking, whisk together ½ cup sugar and 2 tablespoons cinnamon in a shallow bowl.
  11. As soon as pretzel bites come out of the oven, brush generously with melted butter. Toss in cinnamon sugar mixture until coated.
  12. For the dip: In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute.
  13. Slowly pour in milk and beer, whisking constantly. Cook for 2-3 minutes until thickened.
  14. Reduce heat to low, add shredded cheddar, garlic powder, and mustard powder. Stir until melted and smooth. Season with salt and pepper.
  15. Serve pretzel bites warm with beer cheese dip.

Notes

Don’t skip the baking soda bath—it gives pretzels their signature chew. Water temperature should be about 110°F; too hot kills yeast, too cold won’t activate it. Work quickly after boiling to prevent drying. For the cheese dip, add cheese gradually and stir constantly to avoid separation. Leftover pretzel bites can be stored in an airtight container at room temperature for up to 2 days; reheat in oven or air fryer, not microwave.
