Homemade Pumpkin Spice Syrup: Easy 5-Minute Recipe

This homemade pumpkin spice syrup turns an ordinary cup of coffee into a cozy autumn ritual. Made with real pumpkin puree and warm spices, it comes together in just 5 minutes and is far better than any store-bought version.

  • 1 cup (200 grams) granulated sugar
  • 1/2 cup (100 grams) packed brown sugar (light or dark)
  • 3 tablespoons (45 grams) pumpkin puree (100% pure, not pumpkin pie filling)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract (pure)
  • 1/8 teaspoon salt (a tiny pinch)

Instructions

  1. In a small saucepan, combine 1 cup water and 3 tablespoons pumpkin puree. Whisk until mostly dissolved.
  2. Add 1 cup granulated sugar and 1/2 cup packed brown sugar. Whisk until combined; mixture will look grainy and cloudy.
  3. Sprinkle in 2 teaspoons cinnamon, 1 teaspoon ginger, 1/2 teaspoon nutmeg, 1/4 teaspoon cloves, and a pinch of salt. Whisk until spices are evenly distributed.
  4. Place saucepan over medium heat. Stir occasionally with a whisk as it heats. Cook for 3-4 minutes until sugar dissolves and mixture becomes clearer.
  5. Bring to a gentle simmer (small bubbles around edges, not a rolling boil). Cook for 1 minute, stirring constantly.
  6. Remove from heat. Stir in 1 teaspoon vanilla extract.
  7. Optional but recommended: Place a fine-mesh strainer over a glass jar or bottle. Pour hot syrup through strainer to remove any lumps.
  8. Let syrup cool in the jar for about 20 minutes at room temperature before sealing. Refrigerate after cooling.

Notes

For best flavor, use fresh spices. The syrup thickens slightly as it cools. Shake before each use as spices settle. Flavor improves after a day in the fridge. Can be frozen in ice cube trays for up to 3 months. To prevent crystallization, do not boil too hard and use exact sugar measurements.
