Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with aluminum foil and place a wire rack on top. Soak toothpicks in water for 10-15 minutes.
  2. Par-cook the bacon: Place bacon slices on a microwave-safe plate lined with paper towels. Microwave for 2-3 minutes until just starting to render fat but still pliable. Let cool slightly.
  3. Cut each bacon slice in half crosswise.
  4. Wrap each little smokie with a piece of bacon and secure with a soaked toothpick.
  5. In a small bowl, combine brown sugar with any optional spices (BBQ rub or cayenne). Mix well.
