Ingredients

Scale
  • 1 ½ cups all-purpose flour (or half whole wheat flour)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs, room temperature
  • ½ cup granulated sugar (can substitute coconut sugar)
  • ¼ cup brown sugar, packed
  • ½ cup vegetable oil (neutral oil like canola or sunflower)
  • 1 tsp vanilla extract
  • 1 ½ cups grated zucchini, squeezed dry
  • 1 cup fresh blueberries (frozen can be used without thawing)
  • ⅓ cup all-purpose flour (for streusel)
  • ⅓ cup brown sugar, packed (for streusel)
  • ¼ cup unsalted butter, cold and cubed (for streusel)
  • ½ tsp ground cinnamon (for streusel)
  • A pinch of salt (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. Grate zucchini and squeeze out excess moisture using a clean towel or paper towels.
  3. In a medium bowl, whisk together 1 ½ cups flour, baking soda, baking powder, salt, and cinnamon.
  4. In a large bowl, beat eggs with granulated sugar and brown sugar until slightly fluffy. Add vegetable oil and vanilla extract; mix well.
  5. Fold grated zucchini into the wet mixture, then gently fold in blueberries without overmixing.
  6. Gradually add dry ingredients to wet ingredients, folding gently until just combined.
  7. Prepare streusel by mixing flour, brown sugar, cinnamon, and salt in a small bowl. Cut in cold butter with a pastry cutter or fingers until crumbly.
  8. Pour batter into prepared loaf pan and evenly sprinkle streusel topping over it.
  9. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Tent with foil if topping browns too fast.
  10. Cool bread in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
