  • ½ cup packed (110g) brown sugar
  • 2 large eggs, room temperature
  • ½ cup (120ml) vegetable oil (can substitute with melted coconut oil)
  • ½ cup (120ml) sour cream (Greek yogurt can be substituted)
  • 2 teaspoons vanilla extract
  • 2 medium zucchinis (about 2 cups grated, squeezed to remove excess water)
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving a little overhang for easy lifting.
  2. Grate the zucchini finely using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and gently squeeze out excess moisture. Set aside.
  3. In a large mixing bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Whisk to evenly distribute the ingredients.
  4. Stir in the granulated sugar and brown sugar until well blended with the dry mix.
  5. Add the eggs, vegetable oil, sour cream, and vanilla extract. Beat with a hand mixer or whisk until smooth and creamy.
  6. Gently fold in the grated zucchini and chocolate chips, being careful not to overmix.
  7. Pour the batter evenly into the prepared baking pan and smooth the top with a spatula.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Cool completely in the pan on a wire rack before removing and frosting or serving.

Notes

Grate zucchini finely and squeeze out excess moisture to avoid sogginess. Do not overmix after adding zucchini and chocolate chips to keep the cake tender. Use room temperature eggs and sour cream for best texture. Tent pan with foil if edges bake faster than center. Glass pans may require slightly longer baking time.
