Perfect Red White & Blue Berry Trifle: Easy Layered Dessert

This red white and blue layered berry trifle is the kind of dessert that makes people think you’re a pastry chef, but it’s secretly one of the simplest things you can make. It’s become my go-to for Memorial Day barbecues, July Fourth cookouts, and any summer gathering where I want to show up with something that looks like I spent hours on it.

  • 1 store-bought pound cake (about 10.75 ounces), cut into 1-inch cubes
  • 1/4 cup strawberry jam or preserves
  • 2 tablespoons water
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 2 cups cold whole milk
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups fresh raspberries
  • 2 tablespoons granulated sugar (optional)
  • 1 tablespoon fresh lemon juice
  • Fresh mint leaves (optional, for garnish)
  • Extra berries for the top

Instructions

  1. Start with the berries. Wash all your berries gently in cold water and pat them dry with paper towels. Hull and slice the strawberries into even pieces, about 1/4-inch thick. Leave the blueberries and raspberries whole. If your berries taste tart, toss them with the sugar and lemon juice in a medium bowl and let them sit for 10 minutes.
  2. Make the jam syrup. In a small saucepan or microwave-safe bowl, combine the strawberry jam and water. Heat gently until the jam melts and becomes syrupy, about 30 seconds in the microwave or 2 minutes on the stove. Stir until smooth.
  3. Prepare the vanilla cream. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk. Whisk vigorously for about 2 minutes until it thickens. Set it aside. In a separate large bowl, pour the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer on medium-high speed, beat the cream until stiff peaks form, about 3 to 4 minutes.
  4. Fold it all together. Gently fold the thickened pudding into the whipped cream using a rubber spatula. Fold until just combined, with no white streaks remaining.
  5. Assemble the layers. Start with a layer of cake cubes at the bottom of your trifle dish. Use about one-third of the cubes. Brush them generously with the jam syrup. Next, spread one-third of the vanilla cream mixture over the cake. Then, arrange one-third of the berries on top of the cream. Repeat these layers two more times, ending with a final layer of berries on top.
  6. Finish with garnish. Arrange your prettiest berries on the very top layer. Add a few fresh mint leaves around the edges for color contrast. Cover the dish loosely with plastic wrap and refrigerate for at least 4 hours, but overnight is even better.

Notes

Don’t rush the resting time—at least 4 hours in the fridge is crucial for the cake to absorb the jam and cream. Use a clear glass dish to show off the layers. Cut the cake into even 1-inch cubes. Wash and dry berries thoroughly to avoid watering down the cream. Make extra cream (about 25% more) to ensure you don’t run out. Use room temperature ingredients for smoothest pudding.
