  • 1 cup (240 ml) white vinegar
  • 1 cup (240 ml) water
  • 2 tablespoons (25 g) granulated sugar
  • 1 tablespoon (18 g) kosher salt (or 2 teaspoons Morton’s, or 1½ teaspoons table salt)
  • 3 to 4 garlic cloves, smashed
  • 1 teaspoon black peppercorns
  • 1 teaspoon dried oregano (Mexican or Mediterranean)
  • 1 large or 2 small bay leaves

Instructions

  1. Wash and dry jalapeños. Slice into uniform rounds about ⅛ to ¼ inch thick (3-4 mm). Leave seeds in for more heat, or remove for milder flavor.
  2. Place sliced jalapeños and smashed garlic cloves into a clean glass jar, leaving about ½ inch headspace. Do not pack too tightly.
  3. In a medium saucepan, combine white vinegar, water, granulated sugar, kosher salt, black peppercorns, dried oregano, and bay leaf. Bring to a boil over medium-high heat, stirring occasionally, until sugar and salt dissolve (about 3-4 minutes).
  4. Carefully pour the hot brine over the jalapeños in the jar, filling to about ¼ inch from the top. Ensure all slices are submerged; use a clean spoon to push down any floating pieces.
  5. Let the jar cool to room temperature on the counter (about 30-45 minutes). The jalapeños will change color as they pickle.
  6. Once cooled, screw the lid on tightly and refrigerate. Wait at least 24 hours before eating for best flavor. The pickles will keep for 3-4 weeks in the refrigerator.

Slice thickness matters: aim for ⅛ inch for best texture. Do not skip the 24-hour resting period for optimal flavor. For extra depth, toast peppercorns and oregano in a dry pan before adding to brine. Use a chopstick to release air bubbles after pouring brine.
