Refreshing Slow Cooker Watermelon Punch

A simple and flavorful slow cooker watermelon punch perfect for warm-weather entertaining, combining fresh watermelon, herbs, citrus, and a touch of sweetness for an easy all-day sipping experience.

  • 4 cups diced seedless watermelon
  • 1/4 cup fresh mint leaves, loosely packed
  • Juice of 2 limes (about 2 tablespoons)
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • 1-inch piece ginger, peeled and thinly sliced
  • 2 cups sparkling water, added at serving time
  • Optional: 1 cup white rum or vodka for adults

Instructions

  1. Cut about 4 cups of watermelon into small cubes, removing any seeds if necessary (about 10 minutes).
  2. Place diced watermelon, fresh mint leaves, thinly sliced ginger, lime juice, and honey or agave syrup into the slow cooker insert. Stir gently to combine (about 5 minutes).
  3. Cover and cook on low for 2 to 3 hours until watermelon softens and flavors meld.
  4. Remove ginger slices, then puree the mixture using an immersion blender or countertop blender until smooth (about 5 minutes).
  5. Pour the blended punch into a large pitcher and refrigerate for at least 1 hour to chill.
  6. Just before serving, stir in 2 cups of chilled sparkling water. If desired, add rum or vodka. Serve over ice garnished with fresh mint or lime slices.

Notes

Remove ginger slices before blending to avoid sharp bites. Use low heat to prevent cooking the watermelon too much. Adjust sweetness after blending. Add sparkling water just before serving to keep fizz lively. Can be prepared up to 24 hours in advance and stored refrigerated.
