A quick and easy summer drink blending fresh strawberries, lemon juice, vodka, and ice into a sweet, tart, and boozy slushie perfect for hot days and casual get-togethers.

  • ½ cup fresh lemon juice (about 2–3 lemons)
  • ¼ cup simple syrup (homemade or store-bought)
  • 1 cup vodka
  • 2–3 cups crushed ice
  • ½ cup cold water or sparkling water (optional)
  • Fresh mint leaves for garnish

Instructions

  1. Wash and hull about 1 ½ cups of fresh strawberries. Slice them roughly for easier blending.
  2. Roll the lemons on the counter to loosen juice, then cut and squeeze about ½ cup of fresh lemon juice. Strain to remove seeds.
  3. If making simple syrup, combine equal parts sugar and water (e.g., ½ cup sugar + ½ cup water) in a saucepan. Heat until sugar dissolves, then cool completely before using.
  4. In a blender, add the sliced strawberries, fresh lemon juice, ¼ cup simple syrup, 1 cup vodka, and 2-3 cups crushed ice. Optionally add ½ cup cold water or sparkling water for a thinner or fizzier texture.
  5. Pulse the blender starting on low, then gradually increase speed. Blend for about 45-60 seconds until the mixture is slushy and smooth. Check consistency; if too thick, add a splash of water; if too thin, add more ice and blend again.
  6. Taste and adjust sweetness by adding more simple syrup if needed, or add more lemonade or water if too strong.
  7. Pour into chilled glasses and garnish with fresh mint leaves and a lemon wheel. Serve immediately.

Notes

Use ripe strawberries for best flavor. Crushed ice blends faster and creates a smoother texture. Strain lemon juice to avoid seeds. Start blending on low speed to avoid splashing. Adjust sweetness last. Serve immediately to enjoy the icy texture. Leftovers can be frozen and re-blended before serving.
