Refreshing Watermelon Jalapeño Salsa Recipe with Fresh Mint and Tajin

A light, zesty salsa combining sweet watermelon, spicy jalapeño, fresh mint, and tangy Tajin seasoning. Perfect for summer parties, snacks, or pairing with grilled dishes.

  • 4 cups seedless watermelon, cut into small cubes
  • 1 medium jalapeño, finely diced (seeds removed for milder heat if desired)
  • 1/4 cup fresh mint leaves, finely chopped
  • 1/4 cup red onion, finely diced
  • Juice of 2 limes (about 3 tablespoons)
  • 2 teaspoons Tajin seasoning
  • 1/2 teaspoon salt, or to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Cut 4 cups of seedless watermelon into approximately 1/2-inch cubes and place in a mixing bowl.
  2. Finely dice 1 medium jalapeño (wear gloves if sensitive) and add to the watermelon.
  3. Dice 1/4 cup of red onion finely and add to the bowl.
  4. Finely chop 1/4 cup fresh mint leaves and, if using, 2 tablespoons cilantro. Add to the bowl.
  5. Squeeze the juice of 2 fresh limes (about 3 tablespoons) over the mixture and stir gently.
  6. Sprinkle 2 teaspoons of Tajin seasoning and 1/2 teaspoon salt over the salsa. Toss gently to combine without crushing the watermelon.
  7. Cover and refrigerate for at least 20 minutes before serving to let flavors meld. If in a hurry, 10 minutes is acceptable.
  8. Before serving, drain excess liquid if salsa is too watery.

Notes

Use ripe, juicy watermelon for best sweetness. Remove jalapeño seeds for milder heat. Toss gently to avoid breaking watermelon cubes. Let salsa rest in fridge for at least 20 minutes to meld flavors. If salsa is watery after resting, drain excess liquid before serving. Wearing gloves when handling jalapeños is recommended to avoid irritation.
