  • 4 cups fresh watermelon, cubed and seeds removed
  • 2025 fresh mint leaves, washed
  • 1 cup (240 ml) white rum
  • ½ cup (120 ml) fresh lime juice (about 45 limes)
  • ½ cup (120 ml) simple syrup
  • 1 cup (240 ml) sparkling water or club soda
  • Ice cubes, enough to fill pitcher and glasses
  • Optional garnishes: lime wedges, watermelon slices, extra mint sprigs

Instructions

  1. Puree the watermelon cubes in a blender until smooth but slightly textured. Pour into a large pitcher, leaving some pulp for texture.
  2. Gently muddle the mint leaves in a small bowl or directly in the pitcher about 10-12 times using a muddler or the back of a wooden spoon, being careful not to pulverize.
  3. Add 1 cup white rum and ½ cup fresh lime juice to the pitcher. Stir gently to combine with watermelon and mint.
  4. Add ½ cup simple syrup and stir well. Fill the pitcher halfway with ice cubes and chill in the refrigerator for at least 10 minutes.
  5. Just before serving, top off the pitcher with 1 cup sparkling water or club soda. Stir gently to combine without losing bubbles. Serve over ice in tall glasses garnished with lime wedges, watermelon slices, and mint sprigs.

Notes

Add sparkling water just before serving to keep the drink fizzy. Use ripe watermelon for best flavor. Muddle mint gently to avoid bitterness. Adjust simple syrup to taste depending on watermelon sweetness. For non-alcoholic version, omit rum and increase sparkling water or use lemon-lime soda.
