Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips (optional)
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 10-inch cake pan with parchment paper and lightly grease the sides.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes with an electric mixer. Scrape down the sides halfway through.
  3. Beat in the eggs one at a time, mixing well after each addition. Then add the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture in three additions, mixing on low speed until just combined. Fold in the chocolate chips with a spatula if using.
  6. Transfer the dough to the prepared pan. Use your hands or a spatula to press it evenly into the pan, making it as level as possible.
  7. Bake for 20-25 minutes. The edges should look set and slightly cracked, but the center will still look soft. A toothpick inserted in the center should come out with a few moist crumbs.
  8. Let the cookie cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and vanilla extract. Add more milk one teaspoon at a time until you get a consistency that’s thick but still flows slowly off a spoon.
  10. Transfer the icing to a piping bag or a zip-top bag with a tiny corner snipped off. Pipe a small circle in the center of the cookie cake. Then pipe concentric circles radiating outward, spacing them about an inch apart.
  11. Working quickly before the icing sets, use a toothpick or a knife to drag lines from the center outward through all the circles to create the classic spiderweb pattern. Wipe the toothpick clean between each line.
  12. Let the spiderweb design set for at least 30 minutes before slicing.

Notes

Don’t overbake. Pull the cake out when the center still looks slightly underdone. Use room temperature ingredients for best results. The spiderweb design only works if the icing is the right thickness – aim for the consistency of thick maple syrup. Work quickly with the toothpick while the icing is still wet. Let the cake cool completely before adding the spiderweb design.
