  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (120 ml) beef broth or water
  • 1 tablespoon tomato paste
  • 1 large bag (13 oz / 370 g) restaurant-style tortilla chips (look for sturdy ones, not thin rounds)
  • 3 cups (340 g) shredded Mexican blend cheese (or sharp cheddar + Monterey Jack)
  • 1 cup (150 g) canned black beans, drained and rinsed
  • 1/2 cup (75 g) pickled jalapeños, drained
  • 1 large ripe avocado, diced
  • 1/2 cup (120 ml) sour cream
  • 1/2 cup (80 g) pico de gallo or fresh salsa
  • 1/4 cup (10 g) fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Optional: sliced radishes, hot sauce, crumbled cotija cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the ground beef to the skillet. Break it apart with a wooden spoon. Let it cook undisturbed for 2-3 minutes to develop a good sear. Then stir and continue cooking for another 4-5 minutes until fully browned. Drain excess fat if necessary, leaving about 1 tablespoon in the pan for flavor.
  4. Reduce heat to medium. Add chili powder, cumin, smoked paprika, oregano, cocoa powder, salt, and pepper. Stir well and cook for 1 minute until the spices are fragrant. Add the tomato paste and stir to coat the meat. Pour in the beef broth and bring to a simmer. Cook for 3-4 minutes until the liquid reduces and the meat is coated in a thick, glossy sauce. Taste and adjust salt if needed. Remove from heat.
  5. Spread a single layer of tortilla chips on your sheet pan. Arrange them close together but slightly overlapping.
  6. Sprinkle 1 cup of shredded cheese evenly over the chips.
  7. Spoon the seasoned ground beef evenly over the chips. Scatter the drained black beans and pickled jalapeños over the top.
  8. Sprinkle the remaining 2 cups of cheese over everything. Make sure to cover the edges where chips are exposed.
  9. Place the sheet pan in the preheated oven. Bake for 8-10 minutes, or until the cheese is fully melted and bubbling at the edges.
  10. Remove the pan from the oven. Immediately sprinkle diced avocado, dollops of sour cream, pico de gallo, and fresh cilantro over the hot nachos. Squeeze lime wedges over the top.
  11. Serve immediately. Transfer the sheet pan to the center of the table. Provide small plates and let everyone dig in.
