  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs (room temperature)
  • 1/3 cup maple syrup (or honey)
  • 1/4 cup melted coconut oil (or melted butter or neutral oil)
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour (all-purpose works too)
  • 1 scoop vanilla or unflavored protein powder (about 30 grams)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice (or 1 tsp cinnamon + 1/2 tsp nutmeg + 1/2 tsp ginger)
  • 1/4 teaspoon salt
  • 1/3 cup milk of choice (dairy, almond, oat)
  • Optional: 1/3 cup dark chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the wet ingredients: pumpkin puree, eggs, maple syrup, melted coconut oil, and vanilla extract until smooth and well combined.
  3. In a separate medium bowl, whisk together the dry ingredients: whole wheat flour, protein powder, baking soda, baking powder, pumpkin pie spice, and salt. Break up any clumps.
  4. Pour the dry ingredients into the wet ingredients. Add the milk at the same time. Gently fold everything together with a rubber spatula until just combined. Do not overmix.
  5. If using, fold in the chocolate chips or nuts with 3-4 gentle folds.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full. You should get 12 muffins.
  7. Bake for 18-22 minutes. Start checking at 18 minutes by inserting a toothpick into the center of a muffin. If it comes out clean or with a few moist crumbs, they’re done.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Don’t overmix the batter. Room temperature ingredients matter. Check your protein powder’s sweetness and adjust maple syrup accordingly. Let muffins cool completely before storing. Double the recipe for a crowd. Muffins freeze well for up to 3 months.
