This smoky, bright salad features charred grilled corn, creamy black beans, and a zesty lime-cumin dressing. It’s a quick and easy summer side that’s perfect for cookouts, taco nights, or a light lunch.

  • 4 ears fresh corn, husked (or 3 cups frozen corn, thawed and patted dry)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium red bell pepper, diced small
  • 1/2 small red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon honey or agave nectar
  • Salt and black pepper, to taste
  • 1/4 cup crumbled cotija cheese or feta (optional)
  • 1 avocado, diced (optional)
  • Extra lime wedges (optional)

Instructions

  1. Preheat the grill to medium-high heat (about 400°F / 200°C).
  2. Grill the corn directly on the grates for 10-12 minutes, turning every 2-3 minutes, until charred in spots and slightly softened. Let cool for 5 minutes.
  3. Cut the kernels off the cob: stand each ear upright and slice downward with a chef’s knife. You should have about 2 cups of grilled corn.
  4. In a small bowl, whisk together lime juice, olive oil, cumin, smoked paprika, honey, and a pinch of salt and pepper. Set aside.
  5. In a large mixing bowl, combine grilled corn, black beans, diced red bell pepper, red onion, cilantro, and jalapeño (if using). Toss gently.
  6. Pour the dressing over the salad and toss until evenly coated. Let sit for 5 minutes at room temperature.
  7. Taste and adjust seasoning. If adding avocado or cotija, fold them in gently.
  8. Serve immediately at room temperature, or cover and refrigerate for up to 2 hours.

Notes

For best char, dry corn thoroughly before grilling. Let salad rest 10 minutes for flavors to meld. Make ahead: grill corn and prep veggies a day in advance; keep dressing separate until serving.
