  • 23 tablespoons unsweetened almond milk (30-45ml, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with parchment liners or spray generously with non-stick cooking spray.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small chunks (about 1 cup).
  3. Add peanut butter and room-temperature eggs to the mashed bananas. Whisk until smooth and glossy.
  4. In a separate medium bowl, whisk together almond flour, vanilla protein powder, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture, folding gently with a silicone spatula just until combined. If batter is too dry, add 2-3 tablespoons almond milk one at a time.
